Sasha's Recipe Corner

Jerk Marinade:




3 to 4 stalks of scallions

5 to 6 sprigs of Fresh Thyme

8 to 10 cloves of garlic 

1 medium size yellow onion 

2 tbsp of ground Allspice 

1 tbsp of cinnamon 

1 tsp of nutmeg 

1/2 cup of brown sugar

2 tbsp of Dried Jerk Seasoning (optional)

1 tsp of browning or dark soy sauce 

1 scotch Bonnet pepper (2 if you like it spicy)

1/2 cup of oil, (vegetable or olive)

1 lime juiced.

1/4 of vinegar 




Puree all the ingredients in a blender or food processor until liquified...... 


Season meat with dry jerk seasoning, garlic powder, onion powder and black pepper.  Apply 2 to 3 generous tablespoons to your chicken.  Marinate a minimum of 4 hours before cooking.
